General Purpose of Position The Cost Controller is responsible for overseeing and optimising all aspects of cost management within the food and beverage operations of the organisation, and aquarium retail shop. This role involves monitoring food and beverage costs, analyzing variances, implementing cost-saving strategies, and ensuring compliance with budgetary guidelines. The Cost Controller works closely with kitchen staff, procurement teams, and management to control expenses while maintaining quality standards and maximising profitability.  
Main Duties and Responsibilities
  • Menu Costing and Pricing:
    • Calculate the cost of ingredients for menu items.
    • Determine appropriate pricing to achieve desired profit margins.
    • Regularly review and update menu prices to reflect changes in ingredient costs.
    Inventory Management:
    • Monitor inventory levels of food and beverage items.
    • Conduct regular physical inventory counts and reconcile discrepancies.
    • Implement inventory control measures to minimize waste and pilferage.
    Cost Analysis:
    • Analyze food and beverage costs to identify trends and variances.
    • Investigate cost discrepancies and implement corrective actions.
    • Provide regular reports and analysis to management on cost performance.
    Waste Management:
    • Monitor food and beverage waste and develop strategies to minimize it.
    • Implement portion control measures and monitor plate waste.
    • Identify opportunities for recycling and waste reduction initiatives.
    Menu Engineering:
    • Work with chefs and menu developers to optimize menu offerings for profitability.
    • Analyse sales data and menu mix to identify high-margin items and opportunities for menu improvement.
  Knowledge, Experience and Education required
  • Minimum of 2 years’ experience in managing inventory in a Food & Beverage environment
  • Proven experience in stock control, inventory management, or a similar role.
  • Proficiency in using inventory management software preferably in Materials Control, Simphony POS and MS Excel.
  • Knowledge of food and beverage costing methods and inventory management techniques.
  • Strong attention to detail and accuracy.
  • Excellent organizational and time-management skills.
  • Effective communication and interpersonal abilities.
  • Ability to work independently and in a team.
We are seeking to employ a Cleaner who will be responsible for:
  • Performing daily cleaning duties as per cleaning rotas and/or  as assigned by the respective supervisors;
  • Maintaining equipment in clean and orderly condition;
  • Sorting and removing trash, placing it in designated pickup areas;
  • Operating any machinery according to instructions

We are currently seeking to recruit a full-time Food & Beverage Supervisor to maintain high-quality standards through all our F&B outlets, by directing and coordinating all activities and providing assistance to employees. Reporting to the Food & Beverage Manager, the selected candidate will be responsible for:
  • Acknowledge our guests, hosting, answering the telephone accordingly;
  • Greeting, and seating guests;
  • Handling complaints;
  • Provide a high standard of service;
  • Continuously provide feedback to improve the department operating procedures;
  • Handle money transactions, cash float, and billing procedures;
  • Communicate with the team to ensure excellent and consistent service.
The ideal candidate must:
  • Be a natural leader who is customer-oriented, having a pleasant and smart personality;
  • Adapt to a fast and ever-changing environment;
  • Be flexible and willing to work irregular hours including, morning, evening, weekends and public holidays;
  • A good team player with a positive attitude;
  • Be fluent in English and in possession of a valid Food Handling Certificate;
  • Have a minimum of 3 years working experience in a similar role.
